Daily Briefing

Every shift starts from the same briefing.

The manager writes four things. OI adds the rest from the shift plan, the reservations and the approved cards, translates it into the hotel’s other language and shows who has read it.

One evening at Nolde

Nolde is an invented restaurant in an invented hotel. Before the doors open, OI puts the plan, the tables and the guests in front of the whole team.

  1. 14:30Daily Briefing

The manager writes four things. OI writes the rest.

Daniel, the restaurant manager, writes tonight’s focus, what is not available with an alternative, coming events, and a note. OI adds who runs the floor, the stations, a summary of tonight’s reservations, new dishes and announcements, then translates the briefing into the hotel’s other language.

    • Read marks show who has read it, before the line-up starts.
    • Staff ask the assistant about anything in it during service.
    • A quick quiz on tonight’s new dish, written by OI from the approved dish cards, goes to the team, and the manager sees who got it right. The question most missed in the last 30 days is suggested as tonight’s focus line.

  2. 17:45Tables & stations

Everyone knows their tables, and who is coming.

Reservations are kept by the hostess in OI, or pulled every 15 minutes from the outlet’s own reservation system. Guest allergies are recorded as one of the 14 major allergens (EU list), so allergies are always recorded in the same terms.

    • No guest phone number or email is taken. Guests’ names are deleted at the hotel’s day end.
    • With SevenRooms, reservations reach OI every 15 minutes, once the hotel and SevenRooms give access.

  3. MonThe week’s summary

Every week ends with its summary: records, not scores.

Outlet managers, the F&B Director and the General Manager receive the week’s summary: what was published, read and checked, outlet by outlet.

The rest of the team’s day

  • Shifts and stationsThe outlet plans and publishes its own week: shifts, day-off and leave requests, shift swaps. Tables and before-service tasks go only to people on the published plan, approved by the manager.
  • Announcements and calendarAnnouncements from management with read counts, and an Operational Calendar with the whole plan in one place.
  • Staff VoiceStaff write to their outlet’s management without names. OI rewrites each message plainly so nobody is known by their words and groups the messages into themes. Managers answer, and the team sees the answer.
